By 'patch' do you mean the iSync Phone Plugin available from here:

And what do you mean by 'won't accept the patch'? Do you mean it won't install? If so, what error messages do you get? Have you moved the iSync application out of its proper location loose in the main Applications folder?
To change from Bluetooth to USB syncing you have to completely delete your device from both iSync and the Bluetooth system preferences pane, then go back into iSync and choose 'Add Device' from the Devices menu with your phone connected via USB.
Why would you want to change from wireless syncing to cable syncing? Bluetooth (although a bit slower) is so much more convenient...
